salad days

i need a simple and yummy potato salad recipe. hurry! i need to bring the salad to sister #2’s annual summer bbq tomorrow. i only made potato salad once and it turned out like egg salad with chunks of potatoes in it. it was a nightmare.

    german potato salad

    5 lbs potatos
    1 large onion
    white vinagar
    vegetable oil (or whatever you want)
    dried parsley (or italian seasoning)
    salt
    pepper

    boil potatoes w/or w/o skins
    slice after cooked, still warm
    slice onion
    put in bowl
    mix 1 cup oil, 1/2 cup vinagar, little salt and pepper and parsley.
    pour mixture over potatoes and onion while potatoes still warm, warm make the flavor sink in. mix in. taste. add more oil mix if you like. or less.
    chill overnight or as long as you can.

    a fair number of potatoes – red skinned or whatever you prefer.

    green peppers (or not, yur choice)

    hardboiled eggs (as may as you wish)

    dijonnaise (in the mustard/mayo aisle)

    Mayo

    salt

    pepper

    cut potatoes into cubes, boil until tender, not mushy. usually just about until the skin begins to come away from the meat of the potato.

    put potatoes into a bowl, slice eggs and add, slice green peppers and add, mix the dijonnaise, mayo and seasonings to taste. (hint, less mayo and more dijonnaise)

    easy and quick…as well as delicious.

    My mom is the potato salad guru in the family… she says to cut the potatoes after boiling. The texture is better. 🙂
